Cheesy Smashed Potatoes

 

INGREDIENTS:

    • 1 lb. red potatoes (about 3 small potatoes), cut into chunks
    • 1 cup bite-sized cauliflower florets
    • 1/4 cup reduced fat or light sour cream
    • 3 stalks celery, diced
    • 1 cup 2% milk shredded reduced far sharp cheddar cheese

DIRECTIONS:

    1. Place potatoes and cauliflower in large saucepan. Add enough water to cover.
    2. Bring to boil on high heat. Reduce heat to medium; simmer 20 minutes or until vegetables are tender. Drain; return to pan.
    3. Add sour cream; mash until vegetable mixture is light and fluffy. Stir in cheese
